Budget-Friendly Peanut Butter Chicken Ramen

This sweet and savory peanut butter noodle dish is an affordable, protein-packed comfort meal that comes together in under 15 minutes—perfect for busy weeknights or a cozy weekend lunch.

Ingredients:

  • 2 packs ramen noodles (discard seasoning packets)

  • 3 thin chicken breasts, sliced

  • Salt & pepper, to taste

  • 1 tbsp soy sauce or coconut aminos (for chicken)

  • 2 tbsp peanut butter

  • 2 tbsp honey

  • 4 tbsp soy sauce or coconut aminos (for sauce)

  • 1½ tbsp rice vinegar

  • 1 garlic clove, minced

  • ½ tsp fresh grated ginger

  • Optional garnish: sliced green onions

Directions:

  1. Cook the Chicken: Season with salt, pepper, and 1 tbsp soy sauce. Sauté in a skillet until golden and cooked through. Set aside.

  2. Boil Ramen: Cook noodles according to package (without flavor packet), then drain.

  3. Make the Sauce: Whisk peanut butter, honey, 4 tbsp soy sauce, rice vinegar, garlic, and ginger until smooth.

  4. Combine: Toss noodles and chicken in the sauce until fully coated.

  5. Top & Serve: Add sliced green onions if you’d like!

Estimated Cost: Around $5.40 total—just $1.80 to $2.70 per serving!

Tips to Save More: Use canned chicken, generic noodles, or powdered spices if needed.
