Budget-Friendly Peanut Butter Chicken Ramen
This sweet and savory peanut butter noodle dish is an affordable, protein-packed comfort meal that comes together in under 15 minutes—perfect for busy weeknights or a cozy weekend lunch.
Ingredients:
2 packs ramen noodles (discard seasoning packets)
3 thin chicken breasts, sliced
Salt & pepper, to taste
1 tbsp soy sauce or coconut aminos (for chicken)
2 tbsp peanut butter
2 tbsp honey
4 tbsp soy sauce or coconut aminos (for sauce)
1½ tbsp rice vinegar
1 garlic clove, minced
½ tsp fresh grated ginger
Optional garnish: sliced green onions
Directions:
Cook the Chicken: Season with salt, pepper, and 1 tbsp soy sauce. Sauté in a skillet until golden and cooked through. Set aside.
Boil Ramen: Cook noodles according to package (without flavor packet), then drain.
Make the Sauce: Whisk peanut butter, honey, 4 tbsp soy sauce, rice vinegar, garlic, and ginger until smooth.
Combine: Toss noodles and chicken in the sauce until fully coated.
Top & Serve: Add sliced green onions if you’d like!
